Like freezing cold. Too cold to go out and play cold. Pipes freezing kinda cold….(if you live in a rental with really crap pipes). It&#8217;s the kind of day, where all day long I think about what warm comforting meal I want to sit down and eat tonight with the ones I love. Well this is it. This is the meal I wish I still had. Sadly we ate it all two nights ago and all I have left are these pictures. Oh and did I mention we have almost no groceries in the fridge! ya…it was too cold to do that too. Guess it&#8217;s pea soup and toast for my family tonight. That being said, if you happen to have these ingredients in your home, I highly suggest this is what you warm your tummy with tonight. Recipe adapted from <a href="http://www.madelinelu.com/new-blog/2014/12/9/baked-potatoes-with-kale-mushrooms-and-eggs?rq=baked%20potatoes%20with%20kale%2C%20mushrooms%20and%20eggs">MadelineLu</a>.</p>
<p>Serves 4</p>
<p><strong>Squash bake:</strong></p>
<ul>
<li>3 medium potato, cut into approx 1/2 inch cubes</li>
<li>2-3 cups butternut squash, or squash of choice, cut into approx 1/2 inch cubes</li>
<li>4 cups crimini mushrooms, sliced</li>
<li>1 large cooking onion</li>
<li>3 cloves of garlic,minced</li>
<li>1 tsp smoked paprika</li>
<li>1 tsp cumin</li>
<li>1/4 tsp chipotle chili powder</li>
<li>1 generous handful fresh parsley, chopped</li>
<li>salt and pepper to taste</li>
<li>oil for cooking; safflower, olive or coconut</li>
</ul>
<p><strong>Dill yogurt sauce:</strong></p>
<ul>
<li>1/2 cup plain yogurt</li>
<li>1 tbsp olive oil</li>
<li>2-3 tbsp fresh dill</li>
<li>1 clove of garlic, minced</li>
<li>Mix all of the above together and you&#8217;re done.</li>
</ul>
<p><strong>To make:</strong></p>
<ol>
<li>Preheat the oven to 350.</li>
<li>Bring a large pot of salted water to a boil. Boil squash and potato for about 10 minutes or until just about cooked ( you don&#8217;t want them mushy)</li>
<li>Heat a couple tbsp of oil over medium heat in a cast iron skillet or dutch oven (as I used)….or any oven-proof frying pan for that matter.</li>
<li>Add the onions and garlic and cook until soft.</li>
<li>Once the potatoes and squash have finished cooking, drain them then toss them in over med-high heat.</li>
<li>Add the spices and cook until slightly browned. Stir every so often so they don&#8217;t burn to the bottom of the pan. Add a little more oil or broth if needed. This should take about 5 minutes.</li>
<li>Add the mushrooms and cook for another 5 minutes or until everything is cooked through (keeping in mind you don&#8217;t want a pot of mush). Continue to stir every so often.</li>
<li>Season with salt and pepper.</li>
<li>Stir in the parsley.</li>
<li>Break the eggs over the mixture and bake in the oven for about 10 minutes. A few minutes more if you like your eggs really cooked and a little less if you want super runny.</li>
<li>Remove from oven and sprinkle with a little more paprika and pepper.</li>
<li>Serve topped with the dill yogurt sauce and a side of wild rice and lentils or a nice crispy baguette.</li>

<p>I came up with this recipe yesterday while brainstorming the millions of different types of tacos I could make for dinner. I just happened to have a butternut squash kicking around that needed to be eaten asap&#8230;and so the &#8220;pulled butternut squash taco&#8221; was born. This is another recipe in progress. Don&#8217;t take that the wrong way though, these taste amazing! I just mean I will definitely be playing around with it. I would like to make a healthier bbq sauce and maybe add a few tasty extras. So if you have a fave bbq sauce, feel free to swap it out for the recipe I used. Enjoy.</p>

<p>serves 8</p>
<p><span style="font-family: 'arial black', 'avant garde';">PULLED BUTTERNUT SQUASH</span></p>
<p><span style="font-family: 'andale mono', times;">4 cups butternut squash, shredded</span></p>
<p><span style="font-family: 'andale mono', times;">1 red pepper, thinly sliced</span></p>
<p><span style="font-family: 'andale mono', times;">1 green pepper, thinly sliced</span></p>
<p><span style="font-family: 'andale mono', times;">1 large yellow onion, sliced in half moons</span></p>
<p><span style="font-family: 'andale mono', times;">1 can of black beans, strained</span></p>
<p><span style="font-family: 'andale mono', times;">safflower oil</span></p>
<p>&nbsp;</p>
<p><span style="font-size: 10pt; font-family: 'arial black', 'avant garde';">BBQ SAUCE</span></p>
<p><span style="font-size: 10pt; font-family: 'andale mono', times;">3/4 cup ketchup</span></p>
<p><span style="font-family: 'andale mono', times;">1 1/2 tbsp apple cider vinegar</span></p>
<p><span style="font-family: 'andale mono', times;">1 tbsp worcestershire sauce</span></p>
<p><span style="font-family: 'andale mono', times;">1-2 tbsp honey</span></p>
<p><span style="font-family: 'andale mono', times;">1 tsp smoked paprika</span></p>
<p><span style="font-family: 'andale mono', times;">1 tsp chipotle chili powder</span></p>
<p><span style="font-family: 'andale mono', times;">1/2 tsp garlic powder</span></p>
<p><span style="font-family: 'andale mono', times;">1 tsp onion powder</span></p>
<p><span style="font-family: 'andale mono', times;">1 1/2 tbsp mollases</span></p>
<p><span style="font-family: 'andale mono', times;">1 tsp dijon mustard</span></p>
<p><span style="font-family: 'andale mono', times;">salt and pepper to taste</span></p>
<p>&nbsp;</p>
<p><span style="font-family: 'arial black', 'avant garde';">T<span style="font-size: 10pt; font-family: 'arial black', 'avant garde';">O MAKE BBQ SAUCE:</span></span> Add all of the above bbq sauce ingredients in a medium sized bowl and whisk until blended.</p>
<p>&nbsp;</p>
<p><span style="font-family: 'arial black', 'avant garde'; font-size: 10pt;">TO</span> <span style="font-family: 'arial black', 'avant garde'; font-size: 10pt;">MAKE</span> <span style="font-family: 'arial black', 'avant garde'; font-size: 10pt;">THE</span> <span style="font-family: 'arial black', 'avant garde'; font-size: 10pt;">PULLED</span> <span style="font-family: 'arial black', 'avant garde'; font-size: 10pt;">BUTTERNUT</span> <span style="font-family: 'arial black', 'avant garde';"><span style="font-size: 10pt;">SQUASH:</span></span> In a Cuisinart using the shredder attachment, shred the butternut squash. In a large pan ( preferably one with a lid ) heat the oil over medium heat.  Add the shredded squash, peppers and onion. Cook, covered, for 10 minutes stirring throughout. Add 2 tbsp of water and cook, covered for 5 min. Add the sauce, as much or as little as you like. Add the black beans and cook for 5 more minutes.</p>

Spread a layer of crema. Pile on some pulled butternut and top with avocado, shredded cheese and sriracha.</span></span></p>

I decided to make the most of it and cook up my last batch of soup before saying goodbye until the fall.</p>

<li>1 med butternut squash, cubed</li>
<li>1/2 cabbage, chopped</li>
<li>1 can diced tomato (if you want less tomato flavour strain the tomato before adding to the soup)</li>
<li>2 Tbsp olive oil</li>
<li>2 med onion, diced</li>
<li>2 cups of black eyed peas ( I used the canned ones)</li>
<li>4 cloves of garlic, minced</li>
<li>3 bay leaves</li>
<li>5 cups of veg broth (or any liquid, water, beef broth&#8230;etc)</li>
<li>1 1/2  tsp cumin</li>
<li>1/2 tsp chipotle chilli powder</li>
<li>1 tso dried oregano</li>
</ul>
<p>In a large pot, warm the oil over medium heat. Add the onion and saute until it begins to brown. Now add the garlic, cabbage, squash, tomatoes and broth. Reduce heat to simmer, cover and cook for about 30 minutes or so (until the squash is cooked). Now add the spices and the beans; stir until combined. Cook another ten minutes allowing the flavors to blend. Remove from heat. If you like it a bit thicker and smoother (I do) give the soup a quick pulse with your immersion blender&#8230;not a ton but just enough to thicken the broth. Salt and pepper to taste then top with some avocado and goat cheese. Enjoy!</p>
