VERY BERRY CRISP

What makes this crisp extra good is the topping. My friend actually had to ask for more berries to eat with her remaining crisp!

FOR THE BERRY FILLING:

  • 5 cups strawberries, sliced
  • 3 cups blueberries
  • 2 tbsp sugar
  • 3 tbsp cornstarch or flour

TOPPING:

  • 1 1/3 cup brown sugar
  • 1 cup flour
  • 1 cup old fashioned or quick cooking oats
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2/3 butter, cubed and softened

*Note: If you prefer a higher berry to crisp ratio, cut the topping ingredients in half.

Heat oven to 350. In a medium pot mash 2 cups of the strawberries. Stir in the cornstarch/flour and sugar. Over medium heat cook, stirring constantly until it boils. Continue to boil for 1 min. Stir in the remaining strawberries and blueberries. Pour the berry mixture into a greased baking dish. In a medium bowl or stand mixer, mix the brown sugar, flour, oats, cinnamon, salt and butter with a fork or paddle attachment until crumbly. Sprinkle over berry mixture and bake for 30 min. Remove from oven and serve. Don’t forget to add a side of vanilla ice cream;)
